Serves: 4 · 5 min · blender
A golden, savoury, turmeric-and-nutritional-yeast sauce that goes on eggs, vegetables, grain bowls and salad. Blended chickpeas make it thick enough to be a dressing without any dairy.
Ingredients
¼ cup extra virgin olive oil
¼ cup water
¼ cup nutritional yeast
Juice of 1 lemon
3 garlic cloves
⅓ cup canned chickpeas, drained
½ tsp mustard powder
¼ tsp each cumin, curry powder, turmeric, salt, garlic salt, onion salt
⅛ tsp cayenne pepper
Method
Everything into a blender.
Blend until completely smooth — the chickpeas need longer than you expect, so give it a full minute.
Add water a tablespoon at a time if you want it thinner. It thickens in the fridge.
Notes
Nutritional yeast is the flavour. Buy it from the bulk bins at a health food store.
Keeps about a week refrigerated. Shake or stir before using.
Cumin, curry powder, turmeric and cayenne are all in the cooking area. Mustard powder, garlic salt and onion salt are the ones to check before starting.
