Spicy Roasted Pecans — Dark Ancho & Black Sesame Dust

No sweetener. The coating clings because the hot sauce makes the nut tacky, not because sugar glues it on. Matte and dusty, not candied.
Ingredients
1 lb pecan halves
2 tbsp green habanero & carrot hot sauce
1 tbsp neutral oil or melted butter
The dark dust — all already in the house:
3 dried ancho chillies (pantry box) — first batch used 1 California + 2 guajillo, 2026-10-10, after the anchos were toasted to death
2 tbsp black sesame powder (freezer) — 3 tbsp if using guajillo or California, which are redder than ancho
1½ tsp fine sea salt
½ tsp cumin powder
Make the dust
Toast the anchos in a dry pan, 30 seconds a side, until they smell sweet and darken.
Do not let them smoke. A scorched ancho is bitter and unsalvageable.
Cool, pull the stems, shake out the seeds, grind to a powder. About 3 tbsp, deep brown-black.
Stir together with the black sesame powder, salt and cumin.
Roast the pecans
Toss the pecans with the hot sauce and oil until every nut is damp.
Add half the dust, toss again.
Oven 300°F, single layer on a lined sheet, 25 min, stirring twice. Air fryer: 300°F, 12 min, shaking every 4. Work in two batches — a crowded basket steams.
Low heat matters. Pecans go from perfect to acrid in about ninety seconds.
Dust with the rest of the mix while hot. That second dusting is what makes it look powdery rather than baked on.
Cool completely, spread flat. They crisp as they cool, not in the oven — they will feel soft coming out and that is correct.
Notes
2 weeks airtight. If they soften, 5 min at 300°F.
Ancho is the darkest of the three. Guajillo is fruitier and redder, California milder still — with either, push the black sesame to 3 tbsp or the dust reads rust rather than near-black.
Toasting is 30 seconds a side. An hour on medium-low carbonises them and bitter cannot be fixed (learned the hard way, 2026-10-10).
Whole nuts are a choking risk. Nothing here for the baby, and do not chop them small as a workaround.
