Safa's Mild Chicken & Rice Soup

Ingredients
- 1 lb boneless, skinless chicken breast
- 1 small carrot, finely diced
- 1 celery stalk, finely diced
- ½ cup white rice
- 4 cups water or low-sodium vegetable stock
- Optional: 1 Golden Broth Booster cube, once she's tolerating it well
Method
1. Poach
Add chicken, carrot, celery, and water/stock to a pot. Simmer covered 15-18 min until chicken is cooked through.
2. Shred
Remove chicken, shred finely or dice small depending on her current textures.
3. Cook rice in the same pot
Add rice, simmer 15-18 min until fully soft — softer than usual is right for a baby portion.
4. Combine & cool
Return shredded chicken to the pot, stir through, cool completely.
No salt added. This is the one chicken recipe in the house, made just for Safa — check with her pediatrician before adding any seasoning at this age.
How to use
- Portion into a silicone freezer tray or small containers
- Thaw overnight in the fridge, or warm gently from frozen with a splash of water
Notes
- Keep this batch plain and separate from spiced broth cubes until you know how she tolerates turmeric/ginger/garlic
- Keeps ~3 months in the freezer
