Mast-o-Khiar — Persian Cucumber & Yogurt

Ingredients
- 2 cucumbers, diced small, peeled if the skin is thick
- 2 cups plain thick yogurt
- 2 tbsp dried mint
- 1 small garlic clove, grated — optional, and it gets stronger overnight
- 2 tbsp chopped walnuts and 1 tbsp golden raisins — both optional, both traditional
- Salt; olive oil and a pinch more mint to finish
Method
1. Dice
If the cucumbers are watery, salt them 10 minutes and drain. With CSA cucumbers this is usually unnecessary.
2. Stir
Everything together. Crumble the dried mint between your palms first.
Mint thrown in whole tastes of nothing. Crushing it is the whole difference.
3. Chill
At least an hour. Finish with olive oil and more mint.
Notes
- Baby portion: plain yogurt with finely diced cucumber — no salt, no garlic, and omit the walnuts rather than chopping them small
- Keeps 3 days; the garlic keeps getting louder, so go light on a make-ahead
- No starch at all — the free snack of the week
