YKGrub · Oct 2026 · 1 cup dry → ~3 cups · 25 min · ratios for pearled, semi-pearled and whole

- Makes: ~3 cups cooked from 1 cup dry · 25 min including pressure · keeps 5 days
Farro is one of the grains the Instant Pot is actually for. Hands-on time is loading and unloading.
The ratio
Know which farro you have — it changes the water and the time.
| Type | Water per 1 cup dry | High pressure | Release |
|---|
| Pearled (perlato) | 1½ cups | 8 min | Natural 10 |
| Semi-pearled (semiperlato, the usual) | 1¾ cups | 10 min | Natural 10 |
| Whole (integrale) | 2 cups | 15 min | Natural 15 |
If the bag does not say, assume semi-pearled. Most US supermarket farro is.
Method
- Rinse the farro in a sieve until the water runs clear. Skipping this makes it gluey.
- Optional, and worth 3 minutes: Sauté mode, 1 tbsp oil, toast the drained farro 3 min, stirring, until it smells nutty. Noticeably better with a curry.
- Add the water, ½ tsp salt, and a bay leaf if you have one open.
- Lid on, sealing. High pressure for the time in the table.
- Natural release 10 minutes, then vent the rest. A quick release makes the grains split and go starchy.
- Fluff. Drain any standing water — a little is normal.
- Spread on a tray to cool if it is going in the fridge. Left in a hot pot it keeps steaming and turns soft.
Notes
- You likely already have cooked farro from the Wednesday prep — it keeps the full week.
- Baby portion: plain farro, no salt, straight from the pot.
- Scaling: the ratio holds, the time does not change. Do not fill past the pot's half line for grains; they foam.
- Leftovers go cold into bowls and salads. Loosen with a splash of water and 40 seconds in the microwave.
- 1 cup dry is the household cap for a week's anchor grain. Learned from the rye berry overshoot in July.
