Green Habanero & Carrot Hot Sauce

Carrot gives body and sweetness so the heat reads as sauce, not a dare.

Ingredients

Optional, and worth it: the red fresno, 3 jalapeños, the pale green wax pepper and the thin green chilli. Flavour, almost no extra heat.

Air fryer — roast first

Roasting is what lets you use less acid. Charred skins and sweet onion do the balancing that vinegar would otherwise have to do.

  1. Gloves on. Habanero oil does not wash off with soap.
  2. Toss carrots, onion and garlic with 1 tbsp oil. Air fryer, 390°F, 12 min, shaking once.
  3. Add the habaneros and any optional peppers, whole. 390°F, 6 more min, until the skins blister and blacken in patches.
  4. Garlic browns fastest — pull it early if it is colouring hard.

No air fryer: one sheet pan, 425°F, 25 min, peppers added for the last 8.

Sauce

  1. Everything roasted into a saucepan with the lime juice, vinegar, water and salt.
  2. Simmer lid on, 10 min. Keep it covered and run the hood — uncovered habaneros clear a room.
  3. Off the heat, cool 10 min.
  4. Blend 2 full minutes. Under-blending is what makes a hot sauce gritty.
  5. Add the last lime, blend 10 seconds.
  6. Salt to taste. It wants more than you expect.
  7. Thin with water a tablespoon at a time. Strain for glass-smooth, or leave it.
  8. Bottle, fridge.

On the acid

Acid is not a flavour choice, it is what keeps the sauce. Below pH 4.6 nothing dangerous grows. It does not have to be vinegar — lime is just as acidic and tastes bright instead of sharp.
