Ginger-Lemon Cold Cubes

Ingredients
- ¼ cup fresh ginger, peeled and grated
- ½ cup fresh lemon juice (about 3 lemons), zest of 1 lemon
- 2 tbsp honey
- ¾ cup water
Method
1. Warm gently
Combine everything in a small saucepan over low heat just until honey dissolves — don't boil.
2. Freeze
Cool to room temp, pour into an ice cube tray, freeze solid, then pop out into a labeled freezer bag.
Honey is fine — Safa is past 12 months. For any use under age 1, swap in maple syrup or omit.
How to use
- Drop 1-2 cubes into hot water for instant ginger-lemon tea at the first sign of a scratchy throat
- Melt a cube into any soup broth for extra warmth and bite
Notes
- No dilution needed — cubes are concentrated, 1 per mug of hot water
- Keeps ~3 months in the freezer
