Fall Granola — Maple, Pecan & Warm Spice

Built as a topping: bigger clusters, less sweetness than most granola, and warm spice that lines up with stewed apple rather than fighting it.

1. Low and slow

325°F, parchment on a large rimmed sheet. At 350°F the outside browns before the inside dries, and that granola goes soft within a day.

2. Coat

Mix the dry. Whisk maple, oil and vanilla, pour over, stir until every oat is coated. Fold in the egg white if using.

3. Press

Spread it out and press it down firmly into one flat slab.

Pressed granola makes clusters. Loose granola makes dust. Then do not stir it while it bakes — stirring is what breaks the clusters.

Baked late? Leaving the pan out uncovered overnight is the ideal cool, not a compromise. The only real mistake is covering or jarring it while warm — trapped steam softens it and it does not come back.

4. Bake and cool

35–40 min, rotating the pan once. Cool completely on the pan, undisturbed, at least 45 minutes — it crisps as it cools and is still soft out of the oven. Break it up by hand, then fold in the dried fruit. Baked in, dried fruit turns to leather.
