Cucumber-Nectarine Salad with Lime

Ingredients
- 2 Persian cucumbers, sliced thin
- 2 ripe nectarines, sliced into wedges
- 1 cup halved grapes
- 2 cups mixed lettuce and watercress, torn
- Juice of 1–2 limes
- 1 tbsp olive oil
- Pinch of salt
- Optional: 1 apple, thin-sliced, added at the end to keep it from browning
Method
1. Make the dressing
Whisk lime juice, olive oil, and a pinch of salt in the bottom of a large bowl.
2. Toss the cucumber and nectarine
Add cucumbers and nectarines, toss to coat. Let sit 5 min so the nectarine juice mingles with the dressing.
3. Add the greens
Add grapes, lettuce, and watercress, toss gently.
4. Finish
Add apple slices last, toss once more, and serve immediately.

- Peppery watercress balances the sweetness of the fruit
- Assemble apple last since it browns fastest
