Ingredients
- 1 Siete tortilla
- 1 egg
- ¼ avocado
- 2 tbsp black beans
- Sautéed kale, or whatever fresh greens you have
- Salsa
- Cilantro
- Hot sauce (optional)
Method
- Heat a skillet over medium with a little oil and crisp the tortilla on both sides — a few minutes, to your taste.
- In a cast iron pan, heat a little ghee until hot. Crack the egg in, keeping the yolk intact.
- Turn the heat down to low and leave it — do not flip. Cook until the whites are set and the yolk is still runny.
- Sauté the kale and the black beans on the other side of the pan while the egg cooks.
- Smash the avocado onto the tortilla with a fork before anything else goes on; it is the glue.
- Top with the egg, the greens and beans, salsa, cilantro and hot sauce.
Notes
- One tortilla, one egg. Scale by the number of people rather than making a bigger single taco.
- Leila: skip the avocado — the egg and beans still carry it.
- Works with any leftover cooked greens, so it is a good use for the end of a bunch of kale or chard.
- The green habanero carrot hot sauce in the fridge is the right hot sauce for this.
