Baingan Bharta — CSA Eggplant, Minimalist

Source: Built for the 7 October 2026 CSA box (2 eggplants, one long). Uses the Baingan Bharta masala already in the pantry spice box, so it adds no new purchases.

Serves: 2 adults with rice, plus a baby portion and one lunch's leftovers.

1. Char the eggplants whole, directly over a gas flame on medium-high, 12–15 min, turning with tongs every few minutes until the skin is blackened all over and the flesh has collapsed. A fork should meet no resistance. No gas: 450°F oven, pierced, 40–45 min, then 3 min under the broiler. The oven version is easier but gives up most of the smoke, which is the point of the dish. 2. Rest until cool enough to handle, peel off the blackened skin, discard the stem, and chop the flesh roughly. Do not purée it — bharta wants texture. Baby's portion comes out here: plain roasted eggplant flesh, nothing added. 3. Heat the oil, crackle the cumin seeds, then cook the onion until properly browned at the edges, 8–10 min. This is the step people cut short and it is where the sweetness comes from. 4. Ginger-garlic, 1 min. Turmeric, chilli and the bharta masala, 30 seconds in the oil. 5. Tomatoes and salt. Cook until they break down and the oil separates out at the edges, 6–8 min. 6. Fold in the eggplant. Cook 8–10 min more, mashing against the side of the pan, until it is thick rather than wet. 7. Kasoori methi if using, cilantro, off the heat.
