Ingredients
2 apples, diced (skin on)
1 cucumber, diced
2 celery stalks, thinly sliced
1 tbsp lemon juice
1 tbsp olive oil
Pinch of salt
Optional: chopped mint or parsley, pinch of cumin
Method
1. Dice
Cut apple, cucumber, and celery into similar-sized small pieces.
2. Toss immediately with lemon
Lemon juice keeps the apple from browning — add it right after cutting.
For baby: dice extra small or lightly steam the apple and cucumber first if she's not ready for raw firm textures. Skip the lemon and salt for her portion.
3. Finish
Add olive oil, salt, and herbs/cumin if using. Toss and serve.
Notes
Best eaten within a few hours of cutting — apple softens as it sits
Good cold, crunchy side against the chard & bean stew or bhindi masala
